After purchasing your produce from one of Colorado’s farmers’ markets, try your hand at these simple recipes designed to bring out the flavor of our food.
Cantaloupe and Avocado Salad With Chili Dressing
Ingredients:
Chili Dressing
Prepared chili sauce (1/4 cup)
Worcestershire sauce (2 tsp.)
Honey (1/4 cup)
White vinegar (3 Tbs.)
Onion (2 tsp., minced)
Canola oil (1/2 cup)
Salad
Butterhead lettuce (1 small head, torn)
Red leaf lettuce (1 small head, torn)
Celery (1/2 cup, chopped)
Rocky Ford Cantaloupe (1, sliced)
Avocado (1, sliced)
For the dressing, combine the chili sauce, honey, vinegar, Worcestershire sauce and onion in a bowl, mix well. Add canola oil and whisk until blended. Cover and chill. Whisk before serving.
For the salad, toss lettuce and celery in a bowl. Add desired amount of dressing and toss. Add the cantaloupe and avocado then toss gently.

Peaches ‘n Cream Pie
Ingredients:
Sugar (3/4 cup)
Flour (1/4 cup)
Heavy cream (1 cup)
Salt (1/4 tsp.)
Palisade peaches (8, peeled and sliced)
Salt (dash)
Lemon juice (to taste)
9-inch unbaked pastry shell (1)
Butter (2 Tbs.)
Cinnamon (2 tsp.)
In a bowl, mix sugar, flour, cream and salt. Slice the peaches and sprinkle with salt and lemon juice. Place peaches in unbaked pie shell. Pour mixture over peaches and dot with butter and sprinkle with cinnamon. Bake at 425 degrees Fahrenheit for 15 minutes, then lower temperature to 300 degrees Fahrenheit and continue to bake for 40–45 minutes.
Serves 6–8

Spicy Black Bean and Corn Salsa
Ingredients:
Black beans (16 ounces, cooked)
Colorado white or yellow corn (kernels from 2 cobs, boiled)
Cilantro (1/2 cup, fresh)
Green onion (1/4 cup, chopped)
Red onion (1/4 cup, chopped)
Lime juice (1/3 cup)
Vegetable oil (3 Tbs.)
Cumin (1 Tbs., ground)
Salt and black pepper (pinch)
Tomatoes (1/2 cup, chopped)
In a large bowl, combine beans, Colorado corn, cilantro, green onion, red onion, lime juice, vegetable oil, cumin, salt and pepper. Cover and chill for at least two hours. Serve with corn chips.
Makes 4–6 cups
