Owned by the Edwards family for more than 35 years, it also follows that this breakfast joint would be a Salida — and in fact a Chaffee County — institution. And while the (strangely patio-less) restaurant serves all the breakfast staples and delicious lunch items, including a highly touted green chile, it’s the old-fashioned buttermilk pancakes that rake in the bulk of the praise.

Order a stack, short stack, silver-dollar size or one giant cake, and fall in love with fluffy goodness. Take a spin on the decadent side and order them filled to spilling with fruit, chocolate or pecan filling and topped with a delicious array of syrups (blueberry’s a popular option), and you might think twice about heading up Mount Shavano in such a hurry.

Stay a bit longer and pair your ’cakes with “Not Your Mama’s Hash Browns,” topped with cheese and the aforementioned green chile. And, well, now it seems like you’re probably gonna be too full for that bike ride you were planning, so you might as well take on that near-Frisbee-sized, peanut-butter-frosted cinnamon roll everyone else is digging into.

Basically what we’re saying is it’s difficult to leave this beloved local spot without being full. If you can tear yourself away, you will have all the fuel needed to take advantage of Salida’s supreme outdoor-recreation location.
